Meal planning can sound daunting, but it doesn’t have to be! Dedicate one hour every week to plan your meals, determine the ingredients you have on hand already, and get your grocery list together! I’ve created a pdf for you to print out, which will help organize your meals, so you know what you’re having for each meal of the week. Don’t forget to plan your days out too, so you know when you don’t have to cook! I hope you find it helpful!

This week, we’re planning Hatch Enchiladas Suizas, Hatch Macaroni Salad from the new Hatch Pepper Cookbook (available for digital download as well) from Melissa’s Produce, Vegan Philly Cheesesteaks, Kale Caesar Salads, and Panzanella Salad using a gift from the garden of my dear friend Abril from Vida I Am Health And Wellness. We have a lot of ingredients already for the menu already, so my grocery list will be minimal! Let me know in the comments what you’re planning to make this week!
