I always look forward to Thanksgiving. Even though it is a tremendous amount of work to prepare the meal, I love to share it with people, and send them home with a ton of leftovers. It’s not only the food that is the star, it’s the togetherness, the sharing, the conversation, and over-all jolliness that contribute to the magick of the holiday.
One thing, though, that I look forward to almost as much as the actual Thanksgiving meal itself, are these Turkey Avocado Sliders.
It was back in ’98 or ’99 that my roommate and I hosted a Thanksgiving dinner for all of our friends. We all worked at T.G.I.Friday’s, and I guess none of us really had any family to visit that year. Either that, or we all really enjoyed each other enough to make a commitment to one another for this holiday.
I made two turkeys that year, Broccoli Casserole, Rho Rho Rolls, and countless other sides. We feasted, and I think just about everybody stayed the night because of our tryptophan and carb over-dose. I woke up the next morning to one of our friends sitting in the kitchen with little sandwiches made out of the Rho Rho Rolls, turkey, cranberry sauce, and just about every side we had the night before. That’s what started it all. From what I remember, someone else made a sandwich with just turkey, avocado, and mayo. I was never a fan of avocado until this day. This was my gateway food for eventually loving avocado, and I am forever thankful!
So, take your leftover dinner rolls from last night, your left over turkey, find an avocado and mayonnaise, and construct this lovely sandwich! Add some fresh baby spinach to bump up the veggie profile. Make a dent in those Thanksgiving leftovers!
