I adore beets. I know that some people are vehemently against them, but they are SO GOOD for you, and are perfect for sweet, earthy creations just like this smoothie bowl. Plus, this particular bowl of delights will get your blood pumping, making your Valentine’s Day memorable AF.
It’s always important that smoothies be balanced, with a good amount of vegetables and sweet fruits. Too much fruit, and you’ve got a sugar bomb. It’s a fiber rich sugar bomb, but still. Too much vegetable, or savory fruits make for a smoothie that you have to choke down, as it’s not appetizing or enticing.
In our case here, we take a cue from celery, cucumber, and the almighty beet to get our savory vegetables in, plus it adds to that GORGEOUS color. For the sweet: apple, mango, and banana. Lemon brightens all of the flavors. I threw in a superfood acai packet for good measure!
Now, I mentioned that this will get the blood pumpin’ – and here’s why. BEETS! Beets are a powerful blood cleanser because of the iron they contain, and the pigment betacyanin helps oxygenate the blood, increasing its oxygen-carrying capacity by 400%! That’s only a few benefits of that precious root. They are also very rich in antioxidants, calcium, iron, magnesium, fiber, folate, have a high concentration of vitamins A & C, and are extremely alkaline, which is great for the body’s pH! Whew!

Valentine’s Day Smoothie Bowl
Ingredients
Smoothie
- 1 1/2 Cups Water
- 1 Whole Beet Fresh, small
- 2 Whole Celery Stalks
- 1/2 Cup Cucumber With Skin, Chopped
- 1 Whole Apple Cored & Cubed
- 1 Whole Mango Cubed
- 1/2 Lemon Peeled
- 1 Whole Banana
- 1 Packet Acai Frozen
Toppings
- 2 Tablespoons Hemp Hearts
- 2 Tablespoons Cocoa Nibs
- 1/4 Cup Blueberries Fresh
- 2 Tablespoons Raspberries
- 2 Teaspoons Chia Seeds
- 10 Leaves Mint
Instructions
- Blend all smoothie ingredients until very smooth. Pour in a bowl, and artfully top with the smoothie toppings.
