Last week, I went to the Riverside Farmer’s Market, and was head over heels for the blood oranges. I didn’t get enough of them the previous week, so I was there to stock up! The vendor was insistent upon me trying the Clementines since I was so gung-ho over the blood oranges. They looked so very orange, it almost seemed un-natural! I had never had this citrus before, and I was pleasantly surprised! I’m not a fan of extremely tart things, and these were so sweet and delicious.
I got home from the market, and was checking my twitter accounts, and to my surprise, Kate Knowles from If You Can Make That You Can Make This had posted a reply to someone who had made her Clementine Cake! I was intrigued with the use of citrus in a cake, so Kate graciously tweeted me the direct link for this awesome sounding Clementine Cake. I tried it over this past weekend, and it was absolutely delicious! The recipe was really easy too! The hardest part was waiting for the clementines to boil. With it being made of ground almonds, and absolutely no flour, it would be great for those who are allergic to gluten! Enjoy!
